フードテック分野では植物工場・陸上養殖・食品機械・新規食品の4分野を検討し、植物工場と陸上養殖を先行。植物工場は自然環境に左右されず定時・定量生産が可能だが、商業栽培できる品目が限定的・光熱費等が高く収益性向上が大きな課題。日本は施設園芸・工業両分野の高い技術と植物工場運営の実績が強み。日本品質の農産物と植物工場システムをパッケージ化し食料安定供給・環境負荷低減のソリューションとして国内外に展開し収益化を図る。

陸上養殖は海洋環境の変化に左右されず水産物の安定供給が可能だが、安定生産が実現していない実証フェーズの技術。日本には水処理・浄化技術、寒暖差を活かした多様な魚種の種苗生産技術、最先端のゲノム関連技術、藻類の発酵技術等の強み。用途・規模に応じた安定生産可能なモジュールを作り拡大する水産物需要に対応し国内外に展開。天然資源や輸入に依存する種苗・飼料も生産性の高いものを内製化。日本食とセットでのシステム海外展開、日本産種苗・飼料の販売で日本に富を呼び込む。

フードテック分野では先行する植物工場・陸上養殖に加え食品機械・新規食品を検討。食品機械は人手不足解消の観点から高性能化が世界的に進展し、日本の食品加工機械は耐久性やアフターフォローなどハード・ソフト両面で強み。生鮮品の鮮度保持技術も進展し日本食品の世界展開の起爆剤となる。各国規制への対応、日本主導の国際標準策定、海外市場開拓、現地保守サービス対応を含めたビジネスモデルとして海外展開を目指す。

新規食品について。日本では豊かな食文化を背景とした発酵技術・調味技術、高品質な農林水産物、食品への高い信頼性を強みに様々な新規食品が開発されている。特に食料・環境・栄養等の社会課題に対応できる非動物由来タンパク食品や機能性栄養食品は国内外で需要拡大が見込まれる。新商品開発・試験生産、各国の食品規制への対応、日系小売等との連携による海外市場開拓、日本主導の国際標準策定で欧米・アジア等への市場拡大を目指す。

植物工場は日本が20年前に世界初で商用化したがレタスしか作れず多くが撤退した歴史を紹介。気候変動で既存農業コストが急騰する中、植物工場はトヨタ・テスラクラスの企業が出る100兆円産業になると説明。他社がレタスから始める中イチゴを選び、創業4年目でハチの完全受粉に成功、世界初のフルーツ量産と収益化を達成し時価総額世界トップに。施設園芸と工業を併せ持つのは日本だけで10年は他国が追いつけないとした。

ニューヨークから1時間の最新農場は東京ドームより少し小さい倉庫で日本の1県分のイチゴを生産可能、水も全リサイクル・クリーンエネルギー・完全無農薬・24時間365日AIロボットが自動収穫すると説明。価格は当初1パック50ドルから7年で7ドル代まで低減、数年以内に1パック500円でも利益が出る水準。プラント輸出で自動車産業に続く新たな100兆円産業創出を目指し、10年スパンで数百億〜1000億の投資支援を要請。

プレゼンしたOishii Farmには一昨年ニュージャージーのメガファーム立ち上げ時期に訪問し意見交換したと述べ、激甚化する自然災害・気候変動の影響に左右されない安定的な食料生産力の確保が可能になること、ロボット・品種・AIも含め日本の産業技術の粋が詰まった植物工場等のフードテックへの投資促進が近い将来日本の稼ぐ力になることの2点を強調。スタートアップから大企業までフードテック戦略を作るとした。
